Perfectly Roasted Beets

This week’s food of the week (beets) is near the top of charts for nutrition – and this recipe is near the top for flavor!

 

These roasted beets are delicious right out of the oven … but also in a salad the next day.

 

Perfectly Roasted Beets

(makes 6 servings)

 

  • 12 small/medium beets
  • 3 Tbsp olive oil
  • ¾ tsp dried thyme
  • ½ tsp dried rosemary
  • 2 tsp pink Himalayan salt
  • 1 tsp freshly ground black pepper
  • 2 Tbsp apple cider vinegar
  • 1 orange, juiced

 

Preheat your oven to 400ºF/200ºC. Optional: for easier clean-up, line a baking sheet with foil to protect it. If using foil, spray it with non-stick cooking spray.

 

Place the beets, oil, spices, salt, and pepper in a large bowl and toss to coat. Pour onto the baking sheet and place in the oven for 40-45 minutes, stirring every 15 minutes. The beets are done when they are caramelized and tender.

 

Remove from the oven and toss with the vinegar and orange juice. Add more salt and pepper to taste.
