Healthier Sweet Potato Casserole

😋🍠Well, this is an updated version that’s so sweet and rich … you won’t miss the marshmallows!

 ✅Make-ahead tip: You can even do most of the prep ahead of time. When it’s time to prepare it, just sprinkle it with the nut mixture and pop it in the oven.

HEALTHIER SWEET POTATO CASSEROLE

(Makes 8 servings)

  • 5-6 medium-sized sweet potatoes, peeled and cut into 1-inch chunks
  • Cooking spray
  • ⅓ cup maple syrup
  • 1 large egg
  • 1½ tsp pumpkin pie spice, divided
  • Sea salt
  • 1 tbsp coconut sugar
  • ⅓ cup finely chopped pecans

 

Place the sweet potatoes in a pot and add just enough water to cover. Bring to a boil, then cover, reduce heat to medium-low, and simmer for 15-20 minutes, until fork-tender.

 

Meanwhile, preheat the oven to 350ºF(175ºC) and prepare an 8-inch (20-cm) square baking pan with cooking spray.

 

When the potatoes are done, drain and place them in a mixing bowl. Allow them to cool slightly and then add the maple syrup, egg, 1 tsp of the pumpkin pie spice, and ½ tsp sea salt. Whip until smooth, and then spread the mixture into the prepared baking pan.

 

Combine the coconut sugar, pecans, and remaining ½ tsp of pumpkin pie spice in a bowl. Sprinkle it over the sweet potatoes and place in the oven, baking for 40 to 45 minutes, until it begins to brown around the edges.
