I’ve got a fast & easy recipe for you today that was designed to be used with kale … but it actually works with any leafy green (spinach, Swiss chard, etc.).
It’s hearty and delicious – try serving this side dish with your favorite steak or chicken. It’s also great with a poached egg on top!
QUICK SESAME KALE
- 1 bunch of kale
- 1 shallot, minced
- 1 tbsp extra-virgin olive oil
- 3 cloves garlic, minced
- 1 tbsp toasted sesame oil
- 1 tbsp coconut aminos
- Salt and pepper, to taste
Remove ribs and stems from kale leaves and chop the leaves. Heat the oil in a large skillet over medium heat. Add shallot and stir-fry for 1-2 minutes, until it starts to soften.
Add the leaves a little at a time, tossing to coat with oil. When they are wilted (2-3 minutes), add the garlic, sesame oil, and coconut aminos. Cook until all the leaves are wilted, another 3-4 minutes. Taste and add salt and pepper if desired.
